1. Mashed Potato Tacos
Ingredients:
● 6 hard taco shells
● 2 cups dry potato flakes
● 2 tbsp butter
● ½ cup sour cream
● ½ cup shredded cheddar cheese
● ½ cup french-fried onions
● taco sauce
Instructions:
1. Prepare the dry potato flakes according to package directions. Warm the taco shells according to package directions.
2. In a bowl, mix of the prepared mashed potatoes, butter, sour cream, cheddar cheese, and French-fried onions.
3. Fill the taco shells with the mashed potato mixture, and serve with taco sauce.
2. Potato Pancakes

Ingredients:
● 5 potatoes, peeled and shredded
● 2 eggs, beaten
● 1 onion, finely chopped
● 3 tbsp all-purpose flour
● ¾ tbsp black pepper, ground
● ¾ tsp dried oregano

● 3 tablespoons vegetable oil
Instructions:
1. In a large bowl, stir together potatoes, eggs, onion, flour, salt and pepper.
2. In a large skillet, heat oil over medium high heat. Drop large spoonfuls of the potato batter into the skillet and flatten cake slightly with a spatula. Cook for about four minutes on each side, until golden brown. Serve immediately.
3. Baked Mashed Potatoes

Ingredients:
● 5 lbs Yukon Gold potatoes, peeled and cubed
● ½ cup butter
● ¼ cup milk
● 1 (8 ounce) package cream cheese, softened
● 1 onion, grated
● 1 egg
● salt and pepper to taste
Instructions:
1. Preheat oven to 350°F (175°C).
2. Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but firm, about 15 minutes; drain.
3. In a large bowl, mash potatoes with the butter and milk. With a hand mixer, beat and cream cheese and onion. And a small bowl, beat the egg with a little bit of the mashed potatoes. Start into potatoes and season with salt and pepper. Transfer to a 2-quart casserole dish.
4. Bake one hour in the preheated oven, or until puffy and lightly browned.
4. Grandmother’s Baked Potatoes

Cook Time: 1 hour 5 minutes

Ingredients:
● 8 large red potatoes
● 3 tbsp butter
● 1 onion, chopped
● 2 cloves garlic, chopped
● 1 (10.75 ounce) condensed cream of broccoli soup
● 1 (10.75 ounce) can condensed cream of celery soup
● 1 cup milk
● 4 cups Cheddar cheese, shredded
● salt and pepper to taste
Instructions:
1. Preheat an oven to 350°F (175°C). Butter a large baking dish.
2. Wash and peel the potatoes so that only some of the peel remains on the potatoes; cut into ⅛ inch slices. Put the potatoes in the prepared dish.
3. Melt the butter in a large pot over medium high heat. Cook the onion and garlic in the melted butter until soft and translucent, 7 to 10 minutes; stir in the broccoli soup, celery soup, milk, salt, pepper, and about half of the cheddar cheese; cook until the cheese has melted.
4. Pour the mixture over the potatoes; top with the remaining cheddar cheese. Cover with aluminum foil or lid.
5. Bake in the preheated oven for 45 minutes.
6. Remove the cover and cook until the cheese begins to brown, about 10 minutes more.
5. Mediterranean Potato Salad

Ingredients:
● 2 lbs A small red potatoes, and peeled, cooked, cold, and cut in bite-size pieces
● 1 cup green onions, sliced, with green
● 1 pint grape tomatoes, halved
● 1 cup celery, sliced
● ½ cup basil leaves, shredded
● 2 tbsp white balsamic vinegar, or other white vinegar
● 2 garlic clives, crushed
● 6 tbsp olive oil extra virgin
● 2 tsp Dijon mustard
● salt and freshly ground black pepper to taste
Instructions:
1. In a large bowl, combine potatoes, tomatoes, onions, basil, and celery.
2. In a small bowl, whisk together garlic, vinegar, oil, mustard, salt and pepper. Add dressing to potatoes and toss. Refrigerate until ready to serve.
6. Oven-Baked Sweet Potatoes

Ingredients:
● 4 medium sweet potatoes, peeled and sliced ½ inch thick
● ¼ cup butter, melted
● 2 tbsp sugar
● ½ tsp ground cinnamon

2. Arrange sweet potato slices on the baking sheet. Brush with½ the butter. Mix the sugar and cinnamon in a small bowl, and sprinkle½ over the potatoes.
3. Bake 15 minutes in the preheated oven. Turn, brush with remaining butter, and sprinkle with remaining cinnamon and sugar. Continue baking 15 minutes, or until tender.
7. Greek-Style Potatoes

Ingredients:
● ⅓ cup olive oil
● 1½ cups water
● 2 cloves garlic
● ¼ cup fresh lemon juice
● 1 tsp dried thyme
● 1 tsp dried rosemary
● 2 cubes chicken bouillon
● 6 potatoes, peeled and quartered
● salt and pepper to taste
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a small bowl, mix olive oil, water, garlic, lemon juice, thyme, rosemary, bouillon cubes and pepper.
3. Arrange potatoes evenly in the bottom of a medium baking dish. Pour the olive oil mixture over the potatoes.
4. Cover, and bake one and a half to two hours in the preheated oven, turning occasionally, until tender but firm.
