Easy Lemon Cherry Gelato Recipe (VIDEO)

An intense cherry gelato with a burst of fresh lemon citrus prepared in just 10 minutes. Once the mixture is formed, it’s over to the freezer to do the rest of the hard work. Our no-churn gelato recipe is easy, providing a method which does not require constant churning or any specialized equipment. Simply bring the flavors together, pop the container of gelato in the freezer and allow it to set for a few hours. The resulting lemon cherry gelato is bold in flavor with an ultra-smooth texture.

Lemon and cherry, sweet and sour, is a classic combination with this recipe using the ingredients in their purest forms. Lemon is freshly zested into the gelato base to subtly impart the fragrant qualities of the fruit while the cherries are lightly roasted to enhance their sweetness and release cherry juice through the gelato. The cherry juice ripples beautifully through the cream, with the cherries themselves adding bite and texture. If fresh cherries are unavailable then substitute with frozen cherries or maraschino cherries.

Equipment:

Ingredients:

  • 1 cup cherries, pitted
  • 1 ¼ cups sweetened condensed milk
  • 2 ½ cups heavy cream
  • ½ tsp vanilla extract
  • 1 lemon

Instructions:

1. Preheat an oven to 400° F and line a baking tray with parchment paper. Pour the cherries onto the baking tray and spread into an even layer. Roast the cherries for 10 minutes until they start to burst and ooze their juice. Remove the baking tray from the oven and allow the cherries to cool.

2. Into a mixing bowl add the condensed milk, heavy cream and vanilla extract, using an electric whisk beat the mixture to form soft peaks.

3. Zester a lemon into the mixing bowl then pour in the roasted cherries, fold the lemon and cherry to incorporate into the mixture.

4. Transfer the lemon cherry gelato to an airtight container and cover, place in the freezer for at least 6 hours.

5. Remove the lemon cherry gelato from the freezer 5 minutes before serving.
